What is Biltong

Biltong is thick strips of high-end beef marinaded in vinegar and spices then hung up and air-dried for 3 days.  The word ‘Biltong’ is derived from the Dutch words ‘Bil’ (buttock) and ‘Tong’ (strip) referring to it simply as a strip of meat. The Dutch had a prominent influence in South African cuisine as many immigrated there in 1652, when the Dutch East India Company established a permanent settlement at the Cape of Good Hope, which is now Cape Town. 

Graham takes lean strips of top-quality beef, rubs them in a medley spices, then hangs them to dry. He has perfected this method over time, with plenty of trial and error along the way. 

What is Drywors

Dry Wors is derived from the traditional South African Boerewors into a cured, dried snack.

Dry Wors is specifically made into thin sticks as it dries quicker than Biltong. It is made with select chopped beef and spices such as coriander, black pepper, cloves, nutmeg, and salt in combination with Perky’s secret process.
